Tahini Chocolate Chip Cookies
Do you ever have such high hopes for a legitimately healthy dessert recipe and the final product is just a disappointment? Because same. That is why I have worked for years to create the perfect chocolate chip cookies that BOTH taste amazing, AND have real health benefits. Run, don’t walk to the closest health food store near you to get all of the ingredients for these perfect Valentine’s Day treats. Enjoy!
Ingredients:
1 cup of GF oats (I use the One Degree rolled oats)
1 cup Dark Chocolate Chips (I use Hu Gems)
¼ tsp Himalayan salt
1 tsp baking soda
¾ cup Maple Syrup
1 egg
1 cup tahini (The Soon brand is great for baking)
2 tbsp collagen
Instructions:
Preheat the oven to 350
Put your GF rolled oats into a blender, and blend on high until you have made a fine flour
In a large bowl, mix the flour with the collagen, baking soda, salt
Then add the egg, tahini, and maple syrup and mix again
Add the chocolate chips - mix again
Put the dough in the fridge for 30 minutes
After 30 minutes, remove the dough
Start to roll the dough into balls. Each cookie should be about 2 tbsp of dough
Place the balls onto a baking sheet lined with parchment paper. Each cookie should be about 2 inches apart
Lightly flatten out the balls to form a cookie shape
Bake for 11 minutes
Let cool for 30 minutes
