Anytime Oat Bars
Do you ever find that sometimes you want dessert for breakfast or breakfast for dessert? Well, if we are speaking your language - you will love these Anytime Oat Bars. They are Gluten Free, Vegan, Refined Sugar Free, and Zero Fat. Pair these with a glass of dairy free milk and enjoy them ….anytime and anywhere.
Ingredients:
2 cups of organic gluten free rolled oats
3 large peeled bananas
¾ cup organic apple sauce
1 tsp baking powder
½ tsp Celtic sea salt
1 tbsp cinnamon
7 pitted & chopped Medjool dates or ¼ cup unsweetened dark chocolate chips (or both or neither)
Cooking spray (we use organic coconut oil cooking spray)
8 x 12 glass Pyrex baking dish
Instructions:
Preheat the oven to 350 degrees
In a high-speed blender, blend the dry oats until you have created a fine flour
On a cutting board, smash the bananas with a fork until you have created a chunky banana puree
In a large bowl, combine the flour, smashed bananas, and apple sauce and combine with a spoon
Add in the salt, baking powder, and cinnamon and combine again
Finally, add the dates or chocolate chips and combine one more time
Scoop the batter into the Pyrex and spread evenly
Bake for 15-17 minutes or until you can poke the center cleanly with a fork
Let cool for 30 minutes
Cut into 2 x 2 inch squares
Yields 22-30 bars depending on how big/small you cut them
