Nothing tastes more summery than fresh lemon and herbed everything. Since it seems that our vacation days in Capri are further away than we would hope, I wanted to create a dish that tasted like my favorite place in the world, and maybe just for a moment, let my taste buds trick me into believing that I am in Italy. I believe in the healing powers of food, physically of course, but emotionally and spiritually too. It is easy to underestimate the power of our senses, but the smell and taste of your food can spark joy, fulfillment and healing. That being said, not all food that smells and tastes amazing is healing for your body, but almost any dish can be modified to be supportive of your health journey. Here is a taste of my dreamy Italian summer go to dish, with a twist! It is gut friendly – no garlic or onions – and still tastes like magic!
Ingredients:
• ½ cup organic lemon juice (bottled is fine!)
• 2 organic lemons
• 1 box gluten free spaghetti of your choice (or spaghetti squash/zoodles if your preference is paleo)
• ¾ cup Bragg’s nutritional yeast
• 1.5 tbsp Himalayan salt
• 2 tbsp fresh cracked pepper
• ¼ cup chopped fresh parsley
• 1/3 cup cold pressed olive oil (optional)
Instructions:
- Prepare your spaghetti of choice, and then set aside.
- In a large pot, heat ½ cup of organic lemon juice on medium heat
- Once the lemon juice is simmering, transfer your cooked spaghetti into the pot and combine
- Turn the heat down to a simmer
- Slowly sprinkle in the nutritional yeast, salt, and pepper. Gently combine ingredients.
- Squeeze the juice of 2 fresh lemons into the pot, and gently combine again.
- Drizzle on the olive oil (optional), and stir again. Keep the heat low, as you don’t want to cook olive oil on high heat.
- Taste test: add in more salt or cracked pepper to taste.
- Garnish with the liver loving parsley for an added nutrient boost!
